POSITION SUMMARY

This position assists the Director of Food & Beverage by overseeing the Lone Butte Casino and assisting as needed for the Wild Horse Pass Casino.  This position will deliver revenues and profits by providing oversight of all beverage, restaurant and food court operations by developing, marketing, financing and providing appealing restaurant service and will actively supervise, coach, counsel, direct, train and mentor team members in meeting the Enterprise’s quality standards and actively and independently manage all aspects of employee relations to ensure a positive, harmonious, compliant and cooperative work environment by performing the following duties, as well as demonstrating the GILA WAY.

 ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.

  • Promotes and provides excellent guest service experiences to both internal and external guests.
  • Assist in providing leadership and support to management and direct reports within the Food & Beverage Department
  • Responsible for upholding GRGE Food Services & Hospitality integrity and standards for quality and service; establish and ensure completion of operational priorities.
  • Assist with producing and managing annual budgets; support all food and beverage profit and operational improvement.  Reviews weekly, monthly and quarterly financial statements with department managers, Director FB, and Corporate Vice President FB
  • Implement and continuously monitor effective controls for food, beverage and labor costs among all departments.
  • Achieve and exceed financial, guest service, and associate metrics goals.
  • Identify and assist in resolution of operational deficiencies, deviations and variances to standards.
  • Assist with menu engineering, procurement efficiencies, sales enhancements, productivity improvement and concept reinvention. 
  • Ensure departments develop and implement schedules for the operation of all restaurants and bars to achieve ultimate products and services with a profitable result.
  • Continuously evaluates performance and encourages improvement of all food and beverage team members.
  • Assist in overseeing departmental training, mentoring and training programs to develop well-trained team members at all levels of the operation. 
  • Ensure quality standards and service are maintained and compliant 
  • Provides assistance and instruction to team members and makes routine hiring decisions.
  • Communicates daily with management, other department heads and team members to ensure proper operating procedures are in compliance.
  • Responsible for mentoring and developing Pathways Mentorship Program participants to successfully transition to management level positions.
  • Maintains a dependable work attendance record with extremely infrequent absences and/or lateness.
  • Performs other special projects and duties as assigned.

 SUPERVISORY RESPONSIBILITIES

Directly supervises multiple level employees and influences many others at multiple levels of the Enterprise.  Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

 EDUCATION and/or EXPERIENCE

1.  High School Diploma or equivalent required. Bachelor’s degree with major concentration in management, food preparation, nutrition or related field preferred.

2.  Prior experience in a full service restaurant, multi-outlet or events venue required.

3.  Must have excellent people management skills, the ability to manage multiple venues.

4. Must be able to acquire and maintain a valid Gila River Environmental Health Food Handlers Card, Blood-Borne Pathogens (BBP), Alcohol Awareness, and other required compliance trainings.

6.  Must possess excellent guest service skills and be a self-starter with the ability to follow-up and complete tasks in a timely manner with minimum supervision.

8.  Strong interpersonal and communication skills, both written and oral.

9. This position must have, or an ability to acquire within one year,  an in-depth knowledge and thorough understanding of Enterprise Policies and Procedures, governmental regulations, and technical rules relevant to their responsibilities.
